I Love Beats

Beats, as in Dr. Dre, Beastie Boys, Tribe Called Quest and Grandmaster Flash.  

My favorite though? Beets from my garden. So I thought I’d share my super simple recipe with you fresh from my garden. I planted my organic beet seeds in mid-February, and now it’s mid-July and they were more than ready.

 

 

 

 

 

 

 

With the assistance of Kid A, we rinsed them and chopped them up into 1-2″ chunks (all while listening to a little Grandmaster Flash ‘The Message’).

 

 

 

 

 

 

Ingredients are easy….fresh rosemary from my garden and the other usual suspects: olive oil, balsamic, Himalayan pink sea salt and ground pepper.

Mix them all up and toss in the cut beets.

Bake on 350 for about 45 minutes (or until tender), and you’re done!  You can use them as a side dish, add them to a green salad or pasta salad.

Ingredients:

  • 6-8 beets (cut up in 1-2″ chunks)
  • Fresh rosemary (a few sprigs)
  • 2 Tbsp. olive oil
  • 2 Tbsp. Basalmic
  • Himalayan Pink Sea Salt (1 tsp.)
  • Pepper (1 tsp.)
